Red Velvet Cookies

  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon cocoa powder
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 tablespoon red food coloring
  • 1 cup white chocolate chunks

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the dry ingredients: In a large bowl, whisk together flour, baking soda, baking powder, salt, and cocoa powder.
  3. Cream the butter and sugars: In another bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the eggs one at a time, then add vanilla extract and red food coloring.
  5. Combine the wet and dry mixtures on low speed until just blended.
  6. Add the white chocolate chunks and fold in gently.
  7. Scoop dough onto a parchment-lined baking sheet with space in between.
  8. Bake for 10-12 minutes until edges are set and centers are soft.
  9. Let cool for 5 minutes on the sheet before transferring to wire racks.

Notes

These cookies are perfect with milk or coffee. You can also sandwich two cookies with cream cheese frosting for an extra touch of indulgence.
