  • 1 cup Grape or cherry tomatoes
  • 1 cup Feta cheese (crumbled)
  • 1/4 cup Chopped parsley
  • 3 tablespoons Olive oil
  • 2 tablespoons Red wine vinegar
  • 1 clove Garlic (minced)
  • 1 teaspoon Dried oregano
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper

Instructions

  1. Prep the Veggies: Start by washing your cucumber and tomatoes. For the cucumbers, slice them in half lengthwise and then cut them into half-moons or dice them into bite-sized pieces. For the grape tomatoes, cut them in half.
  2. Combine the Ingredients: In a large mixing bowl, toss together the chopped cucumber, halved tomatoes, and crumbled feta cheese.
  3. Chop and Add the Parsley: Next, chop your fresh parsley and add it to the mixing bowl.
  4. Make the Dressing: In a small bowl or a mason jar, whisk together the olive oil, red wine vinegar, minced garlic, dried oregano, salt, and pepper.
  5. Dress the Salad: Pour the dressing over the salad and gently toss everything together.
  6. Taste and Adjust: Give your salad a little taste. Adjust seasoning based on your preference.
  7. Let It Rest: If you have time, let the salad sit for about 10-15 minutes before serving.
