Pumpkin Cauliflower Gratin

A cozy and cheesy dish combining pumpkin and cauliflower, perfect for autumn gatherings.

  • 2 Tbs Butter
  • 1/2 White Onion (sliced)
  • 2 Tbs All-Purpose Flour
  • 2 Tbs Olive Oil
  • 1 Cup Milk
  • 1 Cup Pumpkin Purée
  • 1/2 Tsp Black Pepper
  • 1/2 Tsp Salt
  • 1 Tsp Paprika
  • Pinch of Nutmeg
  • 2 Cups Shredded Gruyère or Swiss Cheese
  • 1 Small Head of Cauliflower (cut into florets)
  • Olive Oil-fried Sage (if desired)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté the onions in butter with a pinch of salt for about 5-7 minutes until translucent.
  3. Make the roux by sprinkling in the flour and stirring for about 2 minutes.
  4. Add the milk and pumpkin purée gradually, stirring until smooth and creamy for about 3-5 minutes.
  5. Season with black pepper, salt, paprika, and nutmeg.
  6. Combine the cheddar into the sauce off heat until melted.
  7. Prepare the cauliflower in a baking dish.
  8. Pour the sauce over the cauliflower, coating each floret.
  9. Top with extra cheese if desired.
  10. Bake for 30-35 minutes or until golden and bubbly.
  11. Fry sage leaves in olive oil while it bakes.
  12. Serve after baking, garnished with crispy sage leaves.

Notes

This gratin can be prepared a day ahead and stored in the fridge. Add 10-15 minutes to the baking time when cooking from cold.
