Cheesy Ground Beef and Rice Casserole

A hearty and comforting Cheesy Ground Beef and Rice Casserole, perfect for family gatherings and busy weeknights.

Ingredients

  • 1 lb lean ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked white rice
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk or beef broth
  • 2 cups shredded cheddar cheese (divided)
  • 1 tsp paprika
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté the onion and garlic in a skillet until translucent (about 3-5 minutes).
  3. Brown the beef in the skillet while breaking it up, and drain excess fat (approximately 8 minutes).
  4. Combine the beef mixture with rice, soup, milk or broth, 1.5 cups of cheddar cheese, paprika, salt, and pepper in a bowl.
  5. Transfer the mixture to a greased 9×13 inch baking dish.
  6. Top with the remaining 0.5 cups of cheddar cheese.
  7. Bake for 25-30 minutes until cheese is melted and bubbly.
  8. Garnish with parsley if desired and serve warm.

Notes

For a spicy kick, add diced jalapeños or hot sauce. For a vegetarian version, swap ground beef with lentils or black beans.
