A vibrant and refreshing Tomato and Cucumber Salad that’s perfect for warm nights, combining juicy tomatoes and crunchy cucumbers in a simple dressing.

  • 2 cups Fresh Tomatoes (cherry, grape, or heirloom)
  • 2 cups Crunchy Cucumbers (English or Persian)
  • 1/4 cup Red Onion
  • 1/4 cup Fresh Herbs (basil, parsley, or dill)
  • 3 tablespoons Extra Virgin Olive Oil
  • 2 tablespoons Red Wine Vinegar (or Lemon Juice)
  • Salt & Pepper to taste

Instructions

  1. Prep your ingredients: Wash your tomatoes and cucumbers thoroughly under cold water.
  2. Chop the veggies: Slice the tomatoes into bite-sized pieces and the cucumbers into rounds or half-moons.
  3. Dice the onion: Soak in cold water for about five minutes, then drain.
  4. Combine in a bowl: Mix chopped tomatoes, cucumbers, and onions together.
  5. Prepare the dressing: Whisk together olive oil, vinegar or lemon juice, and a pinch of salt and pepper.
  6. Dress the salad: Pour the dressing over the salad and toss gently.
  7. Let it marinate: Allow the salad to sit at room temperature for 15-20 minutes.
  8. Add fresh herbs: Sprinkle in chopped herbs before serving.

Notes

For best results, add dressing just before serving to avoid sogginess.
