Protein Costco Butter Pound Cake

A protein-rich twist on the classic pound cake, perfect for any occasion.

  • 1 cup Greek Yogurt or Cottage Cheese
  • 1 cup Protein Powder
  • 2 cups Light Flour Alternative (such as almond flour)
  • 1/2 cup Reduced-Fat Butter
  • 3 large Eggs
  • 3/4 cup Sugar
  • 2 teaspoons Vanilla Extract
  • Pinch of Salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×5 inch loaf pan by greasing and flouring it.
  3. Mix together the reduced-fat butter and sugar until creamy, then add the eggs one at a time, and follow with the Greek yogurt and vanilla extract.
  4. Combine the light flour alternative, protein powder, and salt in a separate bowl.
  5. Incorporate the dry mixture into the wet ingredients and mix until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for about 50-60 minutes, or until a toothpick inserted comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  9. Serve and enjoy with fresh berries or Greek yogurt.

Notes

This cake can be stored in an airtight container at room temperature for up to 3 days, or frozen for up to 3 months.
