A vibrant salad packed with textures and flavors, this Thai Peanut Chicken Crunch Salad features crisp greens, crunchy peanuts, tender chicken, and a creamy peanut dressing.

Ingredients

  • 2 cups of mixed greens
  • 1 cup of shredded carrots
  • 1 cup of red cabbage, shredded
  • 1 cup of cucumber, sliced
  • 1 cup of cooked chicken, diced
  • 1/4 cup of roasted peanuts
  • 2 tablespoons of sesame seeds
  • 1/4 cup of cilantro, chopped
  • 1/4 cup of peanut butter
  • 2 tablespoons of soy sauce
  • 1 tablespoon of honey
  • 1 tablespoon of lime juice
  • 2 tablespoons of sesame oil

Instructions

  1. Prepare the Chicken: If you’re using leftover chicken or rotisserie chicken, simply shred or dice it into bite-sized pieces. If you’re cooking fresh chicken, season it, grill or sauté until cooked, then let rest before dicing.
  2. Make the Dressing: In a small bowl, whisk together the peanut butter, soy sauce, honey, lime juice, and sesame oil until smooth. Adjust the consistency with warm water if too thick.
  3. Chop and Shred: Shred the carrots and cabbage, slice the cucumber, and chop the cilantro.
  4. Combine the Greens: In a large bowl, toss the mixed greens, shredded carrots, red cabbage, and cucumber.
  5. Add the Chicken: Add the chicken to the bowl and toss everything together.
  6. Drizzle the Dressing: Pour the dressing over the salad and toss until coated.
  7. Top It Off: Sprinkle the roasted peanuts, sesame seeds, and chopped cilantro on top.
  8. Taste and Adjust: Give the salad a taste and add more lime juice, salt, or honey if desired.

Notes

This salad is best served fresh. If not serving immediately, keep the dressing separate to maintain crunch.
