Instructions

  1. Start by peeling the kohlrabi with a potato peeler, removing the outer tough skin to reveal the tender white flesh.
  2. Cut the peeled kohlrabi into sticks, about ½ inch wide.
  3. Melt about two tablespoons of butter over medium heat in a large, heavy-bottomed pot.
  4. Add the kohlrabi sticks and toss to coat.
  5. Sauté for about 5-7 minutes until they begin to soften and develop a light golden color.
  6. Pour in the heavy cream, sprinkling in a generous pinch of salt and pepper.
  7. Bring the mixture to a gentle simmer, then reduce the heat slightly and maintain simmering for about 10 minutes.
  8. Stir in grated cheese until it melts into the creamy sauce.
