Summer Tomato and Cucumber Salad

A refreshing and vibrant salad made with juicy cherry tomatoes, crunchy cucumbers, and fragrant basil, perfect for summer gatherings.

Ingredients

  • 4 cups cherry tomatoes, halved
  • 2 cups cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste

Instructions

  1. Prepare the vegetables by washing them thoroughly under cold water.
  2. Chop and dice the cherry tomatoes and cucumbers to your desired size.
  3. Slice the red onion thinly and add it to the bowl with the tomatoes and cucumbers.
  4. Whisk together the olive oil, balsamic vinegar, minced garlic, salt, and pepper in a separate mixing bowl.
  5. Combine the dressing with the chopped veggies and toss gently to coat.
  6. Sprinkle the chopped basil over the salad just before serving and give it a final toss.

Notes

This salad can be prepped ahead of time but combine dressing with veggies right before serving to prevent sogginess.
