Cinnamon Nectarine Crisp

A delightful summer dessert made with juicy nectarines and a crunchy cinnamon topping.

  • 4 medium ripe nectarines, pitted and sliced into 1/2-inch wedges
  • 2 tablespoons fresh lemon juice
  • 2/3 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon non-alcoholic vanilla essence
  • 2/3 cup rolled oats
  • 1/2 teaspoon salt
  • 2/3 cup all-purpose flour
  • 2/3 cup packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted and cooled slightly

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine sliced nectarines, lemon juice, granulated sugar, cornstarch, and vanilla essence in a large mixing bowl.
  3. Transfer the nectarine mixture into a greased 9×9-inch baking dish and spread evenly.
  4. Mix rolled oats, flour, brown sugar, salt, and ground cinnamon in another bowl; then pour in melted butter and stir until crumbly.
  5. Distribute the crumble topping evenly over the nectarines.
  6. Bake for about 35-40 minutes until the topping is golden brown and the nectarines are bubbling.
  7. Cool for 10-15 minutes before serving.

Notes

For an extra indulgence, top with vanilla ice cream or whipped cream.
