Nectarine Watermelon Feta Salad

A vibrant and refreshing salad perfect for summer gatherings featuring juicy watermelon, sweet nectarines, creamy feta, and fresh herbs.

Ingredients

  • 1 mini watermelon (about 3 to 4 pounds)
  • 3 to 4 medium nectarines
  • 6 medium cucumbers
  • Small bundle of fresh mint
  • Small bundle of fresh basil
  • 1 1/2 cups cubed feta cheese
  • 1 large lemon
  • 1/4 cup olive oil
  • 1 1/2 tbsp honey
  • Ground black pepper & salt (to taste)
  • 1/2 tsp poppy seeds (optional)

Instructions

  1. Prep your ingredients: Gather all your lovely ingredients for easy access.
  2. Slice the watermelon: Cut in half, scoop out the flesh into bite-sized pieces.
  3. Chop the nectarines: Wash and slice into wedges, leaving the skin on for color.
  4. Slice the cucumbers: Cut into rounds, half-moons, or cubes.
  5. Wash and chop the herbs: Rinse and roughly chop mint and basil leaves.
  6. Cube the feta: Cut into cubes or crumble it.
  7. Make the dressing: Whisk lemon juice, olive oil, honey, salt, and pepper in a small bowl.
  8. Combine the ingredients: Toss watermelon, nectarines, cucumbers, mint, basil, and feta in a large salad bowl.
  9. Dress the salad: Drizzle dressing over the salad and gently toss.
  10. Chill and serve: Let sit for 15-20 minutes or chill in the fridge for an even more refreshing taste.

Notes

For variations, try adding grilled chicken or shrimp, spicy jalapeños, or different types of cheese.
