Delightful Strawberry Spinach Salad with Chicken

A fresh and vibrant salad combining spinach, juicy strawberries, creamy avocado, and grilled chicken, all tossed in a tangy dressing.

Ingredients

  • 1 cup strawberries, rinsed and stems removed
  • 2 Tablespoons apple cider vinegar
  • 2 Tablespoons extra-virgin olive oil
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • Honey or agave nectar, to taste
  • 23 teaspoons poppy seeds
  • 68 cups fresh baby spinach
  • 810 strawberries, sliced
  • ½ English cucumber, chopped
  • ¼ of a small red onion, thinly sliced
  • 3 stalks of green onion, thinly sliced
  • 68 ounces grilled chicken, shredded or diced
  • 1 medium avocado, sliced or diced
  • ⅓ cup toasted sliced almonds
  • ¼ cup crumbled goat cheese (or feta)

Instructions

  1. Prep the dressing by whisking together apple cider vinegar, olive oil, salt, pepper, and honey. Set it aside.
  2. Wash the baby spinach under cold water and pat dry.
  3. Slice strawberries, chop the cucumber, slice the red onion and green onions, and prepare the grilled chicken.
  4. Combine dried baby spinach, sliced strawberries, cucumber, red onion, green onion, and grilled chicken in a large bowl.
  5. Dressing time! Drizzle your dressing over the salad and toss gently.
  6. Add the avocado slices and toasted sliced almonds, folding them in gently.
  7. Finish with crumbled goat cheese on top.
  8. Serve in a large bowl or plate it individually, garnishing with extra strawberries or poppy seeds.

Notes

Store dressing separately if preparing in advance to keep the salad crisp.
