Strawberry Shortcake

A classic dessert featuring juicy strawberries on a fluffy biscuit base, topped with whipped cream.

  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • Whipped cream for serving

Instructions

  1. Prep the strawberries by combining sliced strawberries with granulated sugar in a medium bowl and set aside.
  2. Preheat your oven to 425°F (220°C).
  3. Make the biscuit dough by whisking together flour, baking powder, and salt, then adding cold cubed butter.
  4. Add wet ingredients of heavy cream and vanilla extract, stirring until just combined.
  5. Shape the dough into a rectangle, cut out rounds, and place them on a baking sheet.
  6. Bake for 12 to 15 minutes until golden brown.
  7. Whip the remaining heavy cream with sugar and vanilla until soft peaks form.
  8. Assemble by slicing biscuits in half, adding strawberries, whipped cream, and topping with the biscuit lid.

Notes

Perfect for summer gatherings, serve with mint leaves for garnish.
