Homemade Strawberry Ice Cream

A classic dessert bringing the sweetness of fresh strawberries blended into creamy ice cream.

  • 1 1/2 cups strawberries, hulled and diced
  • 2 Tbsp honey
  • 1/2 cup granulated sugar
  • 1 tsp lemon juice
  • 1 cup heavy whipping cream
  • 1/2 cup half and half
  • 1 tsp vanilla extract

Instructions

  1. Prepare the strawberries by washing thoroughly, removing the hulls, and dicing into small pieces.
  2. Macerate the strawberries in a bowl with honey and sugar, mashing gently to release juices and allowing to sit for 10-15 minutes.
  3. Mix the heavy whipping cream, remaining sugar, half and half, lemon juice, and vanilla extract in a separate bowl.
  4. Combine the macerated strawberries into the cream mixture until blended.
  5. Churn the mixture in an ice cream maker according to the instructions until thick and creamy, or freeze in a container, stirring every 30-60 minutes.
  6. Freeze the ice cream in an airtight container for at least 4 hours.
  7. Serve the strawberry ice cream in bowls or cones and enjoy!

Notes

For serving, garnish with whipped cream and crushed strawberries. Let ice cream sit for a few minutes if too hard to scoop.
