  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • 6 cups mixed greens (spinach, arugula, or romaine)
  • 1 cup fresh strawberries, sliced
  • ¼ cup red onion, thinly sliced
  • ¼ cup crumbled feta or goat cheese
  • ¼ cup chopped pecans or walnuts (toasted for extra flavor)
  • 1 avocado, sliced (optional)
  • 3 tbsp olive oil (for dressing)
  • 1 tbsp balsamic vinegar or lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp honey or maple syrup
  • Salt and pepper, to taste (for dressing)

Instructions

  1. Cook the chicken breasts: Season with salt and pepper, heat olive oil, cook until browned, and let rest before slicing.
  2. Prepare the dressing: Whisk olive oil, balsamic vinegar, mustard, and honey. Season to taste.
  3. Toss the salad greens in a large bowl and tear larger leaves as needed.
  4. Add sliced strawberries, red onion, cheese, and toasted nuts to the greens.
  5. Slice the rested chicken and arrange it over the salad, adding avocado if desired.
  6. Dress the salad before serving and toss gently.
