Sweet and Satisfying Squash Dessert

  • 1 cup sugar
  • 1/2 cup butter, softened
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat the Oven: Start by preheating your oven to 350°F (175°C).
  2. Prepare the Squash: Peel and chop squash into cubes. Boil until tender (15-20 minutes).
  3. Mix the Wet Ingredients: Cream together softened butter and sugar until light and fluffy.
  4. Add Eggs and Vanilla: Beat in eggs one at a time, then add vanilla extract.
  5. Combine the Squash: Stir in the mashed squash until smooth.
  6. Whisk the Dry Ingredients: In another bowl, whisk flour, baking powder, cinnamon, and salt.
  7. Mix It All Together: Gradually add dry ingredients to wet mixture and stir gently.
  8. Bake: Pour batter into greased pan. Bake for 30-35 minutes or until a toothpick comes out clean.
  9. Cool and Serve: Allow to cool for at least 10 minutes before slicing.

Notes

Serve dusted with powdered sugar or with a scoop of vanilla ice cream. Can also be drizzled with chocolate sauce or caramel glaze.
