  • 23 cups strawberries, tops removed and sliced
  • 4 grilled chicken breasts
  • 1 cup pecans
  • 70 grams goat cheese (or to taste)
  • 1 cup strawberry vinaigrette (or to taste)

Instructions

  1. Prep Your Ingredients: Wash the baby spinach thoroughly in cold water. Pat it dry with a clean kitchen towel or use a salad spinner.
  2. Grill the Chicken: Preheat your grill over medium-high heat. Season the chicken breasts with olive oil, salt, and pepper. Grill for 6-8 minutes on each side until cooked through.
  3. Slice the Chicken: After resting, slice the chicken into thin strips.
  4. Slice the Strawberries and Onion: Thinly slice your strawberries and red onion. Soaking the onion can reduce sharpness.
  5. Toast the Pecans: In a dry skillet over medium heat, toast the pecans for 5–7 minutes until fragrant.
  6. Assemble the Salad: In a large salad bowl, combine spinach, sliced strawberries, onions, toasted pecans, and grilled chicken. Toss gently.
  7. Dress the Salad: Drizzle strawberry vinaigrette over the salad and toss gently.
  8. Top with Goat Cheese: Crumble goat cheese over the top.
