Southern Maple Sweet Potato Casserole

  • 3 cups sweet potatoes, peeled and chopped
  • 1/2 cup pure maple syrup
  • 1/4 cup brown sugar
  • 1/2 cup raisins
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup mini marshmallows (optional)
  • 1 cup chopped pecans

Instructions

  1. Prep the sweet potatoes: Peel and chop sweet potatoes and boil for 15-20 minutes until fork-tender.
  2. Mash them up: Drain, return to the pot, add maple syrup, brown sugar, and spices, and mash until smooth.
  3. Incorporate extras: Fold in raisins and spread mixture into a greased 9×13 baking dish.
  4. Make the topping: Combine brown sugar, pecans, and maple syrup in a bowl and sprinkle over sweet potato base.
  5. Add marshmallows: Layer marshmallows on top if desired.
  6. Bake: Preheat oven to 350°F (175°C) and bake for 30-35 minutes until golden brown.

Notes

You can prepare the sweet potato mixture a day ahead and add toppings right before baking.
