Slow Cooker Chicken Burrito Bowl

  • 1 can diced tomatoes
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Juice of 1 lime
  • Salt and pepper to taste
  • Chopped cilantro for garnish
  • Optional toppings: shredded cheese, avocado, sour cream

Instructions

  1. Prep the Chicken: Start by placing the chicken breasts at the bottom of your slow cooker.
  2. Layer the Ingredients: Next, pour in the diced tomatoes, drained black beans, and corn.
  3. Season It Up: In a small bowl, mix together the chicken broth, remaining chili powder, cumin, garlic powder, onion powder, and salt and pepper.
  4. Set It and Forget It: Cover your slow cooker and set it on low for 6-8 hours or high for 3-4 hours.
  5. Shred and Stir: Once the cooking time is up, take two forks and shred the chicken right in the slow cooker.
  6. Lime Love: Squeeze the juice of one lime over the top and stir.
  7. Serve it Up: Ladle generous portions of your chicken burrito mixture into bowls and add toppings.
