  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon, juiced
  • 2 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Prepare the shrimp by rinsing under cold water and patting dry.
  2. Create the garlic infusion by heating olive oil in a skillet and sautéing minced garlic.
  3. Sauté the shrimp, seasoning with salt and pepper, until pink and opaque.
  4. Add the lemon juice over the cooked shrimp.
  5. Prepare the greens by combining mixed greens and cherry tomatoes in a bowl and seasoning.
  6. Assemble the salad by adding shrimp to the greens and tossing gently.
  7. Serve the salad on a platter, garnished with parsley and cheese.
