Shrimp Avocado Salad with Honey Lime Dressing

  • 2 ripe avocados, diced

  • 4 cups mixed greens (spinach, arugula, romaine)

Instructions

  1. Prep the shrimp: If using frozen shrimp, thaw them in a colander under cold running water for about 5-7 minutes. Pat dry with paper towels.
  2. Season the shrimp: In a large bowl, toss shrimp with a pinch of salt, pepper, and olive oil.
  3. Cook the shrimp: Heat a skillet over medium-high heat and cook shrimp for 2-3 minutes on each side until pink and opaque.
  4. Make the honey lime dressing: Whisk together lime juice, honey, olive oil, minced garlic, salt, and pepper in a small bowl.
  5. Prepare the salad base: In a large serving bowl, combine mixed greens and diced avocado.
  6. Combine: Gently toss the cooked shrimp into the bowl with greens and avocado.
  7. Dress the salad: Pour the dressing over the salad and toss to coat evenly.
  8. Taste and adjust: Adjust seasoning if necessary.
