Shepherd’s Pie

A comforting classic made with layers of savory ground meat, mixed vegetables, and creamy mashed potatoes.

Ingredients

  • 1 lb ground lamb or beef
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup red wine
  • 2 cups beef or vegetable broth
  • 2 tbsp tomato paste
  • 2 tsp Worcestershire sauce
  • 4 cups mashed potatoes
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Prepare your ingredients. Chop vegetables and measure out ingredients.
  2. Sauté the aromatics: Heat olive oil, add onions and garlic, and sauté until translucent.
  3. Brown the meat in the skillet, mixing well with the onions and garlic.
  4. Add the diced carrots and frozen peas, seasoning with salt and pepper. Mix in tomato paste and Worcestershire sauce.
  5. Pour in the red wine, scrape up brown bits, then add the broth and simmer to blend flavors.
  6. Prepare the mashed potatoes by boiling diced potatoes and mashing with butter and cream.
  7. Assemble the pie, spreading the meat mixture in a baking dish and topping with mashed potatoes.
  8. Bake at 400°F (200°C) for 25-30 minutes until golden brown.

Notes

Let the pie cool for a few minutes before serving. Pairs well with a green salad or crusty bread.
