Apricot Shortbread Bars

A delightful treat blending buttery shortbread and sweet apricot jam, dusted with powdered sugar for a satisfying dessert experience.

  • 1 1/2 cups unsalted butter
  • 3/4 cup light brown sugar
  • 3/4 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 3 1/2 cups all-purpose flour
  • 1 1/2 cups apricot jam
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×13 inch baking dish lined with parchment paper.
  3. Cream together the butter, light brown sugar, and granulated sugar in a large mixing bowl until fluffy.
  4. Add the vanilla extract and mix until just combined.
  5. Incorporate the all-purpose flour gradually until just mixed.
  6. Press two-thirds of the dough into the prepared baking dish for the base.
  7. Spread the apricot jam evenly over the dough.
  8. Crumble the remaining dough over the jam layer.
  9. Bake for 30-35 minutes or until golden.
  10. Cool for 15 minutes, then dust with powdered sugar and cut into squares.

Notes

For a dairy-free option, substitute coconut oil for butter. These bars can be frozen for later enjoyment.
