A delightful and zesty shrimp salad that captures the essence of summer with fresh shrimp, crisp veggies, and a tangy dressing.

Ingredients

  • 1 lb medium to large shrimp, peeled and deveined
  • Water for boiling
  • Juice of 1 lemon
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons seafood seasoning (like Old Bay)
  • Ice for ice bath
  • 1 cup chopped cucumbers
  • 1 cup diced tomatoes
  • 1 cup diced bell peppers
  • 2 tablespoons olive oil

Instructions

  1. Cook the shrimp: Bring a large pot of water to a rolling boil. Add shrimp and cook for 2-3 minutes, or until pink and opaque.
  2. Ice bath: Use a slotted spoon to transfer shrimp into a bowl of ice water for 3-5 minutes.
  3. Prep the vegetables: Chop cucumbers, tomatoes, and bell peppers into bite-sized pieces.
  4. Make the dressing: Whisk together lemon juice, minced garlic, seasoning mix, and olive oil.
  5. Toss it all together: In a large bowl, combine shrimp, chopped veggies, and dressing. Toss to coat evenly.
  6. Chill: Let the salad chill in the refrigerator for 15-20 minutes.
  7. Serve and enjoy: Present the salad on a platter with fresh herbs as garnish.

Notes

For added creaminess, consider adding diced avocado. Store leftovers in an airtight container for up to two days.
