Raspberry Swirled Cheesecake Bars

Delightful cheesecake bars swirled with vibrant raspberry jam, perfect for any occasion.

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup raspberry jam
  • Fresh raspberries for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 325°F (160°C).
  2. Prepare the Crust: In a mixing bowl, combine graham cracker crumbs, sugar, and melted unsalted butter. Mix until well coated.
  3. Press Into the Pan: Line an 8×8 inch baking pan with parchment paper and press the crust mixture into the bottom.
  4. Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese until smooth. Add in sugar and vanilla extract, mixing until incorporated.
  5. Add the Eggs: Beat in the eggs one at a time, mixing until combined after each addition.
  6. Incorporate the Jam: Gently fold in the raspberry jam to create a swirled effect.
  7. Bake: Pour the cheesecake filling over the crust and bake for 30-35 minutes, until the center is set with a slight jiggle.
  8. Cool and Chill: Let cool at room temperature for an hour, then chill in the refrigerator for at least 4 hours.
  9. Slice and Serve: Use parchment paper to pull out the cheesecake bars and slice into squares.

Notes

Chill overnight for best flavor. Serve with fresh raspberries and optional raspberry jam drizzle.
