Apricot Coconut Crumble Bars

Delightful bars combining the sweet, tangy flavor of apricots with the chewy goodness of coconut.

  • 3 cups chopped dried apricots
  • 1 cup sugar
  • 1½ cups boiling water
  • 2 cups flour
  • ¾ cup sugar
  • 1 tsp baking powder
  • 2 cups dried coconut (medium cut)
  • Pinch of salt
  • 1 cup butter (cut into small pieces)

Instructions

  1. Prep the apricots: Start by placing the chopped apricots in a bowl and pour the boiling water over them. Let them soak for about 10-15 minutes until they become tender.
  2. Preheat the oven: While the apricots are soaking, preheat your oven to 350°F (175°C).
  3. Mix the base: In a large mixing bowl, combine the flour, ¾ cup sugar, and baking powder. Whisk these dry ingredients together until they’re well mixed.
  4. Add the butter: Toss in the cold butter pieces. Use your fingers or a fork to work the butter into the flour mixture until it resembles coarse crumbs.
  5. Assemble the crumble: Grease a 9×13-inch baking dish or line it with parchment paper for easy removal. Spread half of the crumble mixture evenly across the bottom of the dish.
  6. Layer with apricots: Drain the apricots and spread them over the crust.
  7. Top it off: Sprinkle the remaining crumble mixture over the apricots.
  8. Bake: Pop the dish into the oven and bake for about 30-35 minutes or until the top is golden brown and the edges are bubbling.
  9. Cooling time: Remove from the oven and let it cool in the pan for at least 15-20 minutes before slicing into bars.

Notes

These bars taste even better the next day! Keep them in an airtight container for up to four days or refrigerate for a week.
