Homemade Pumpkin Muffins

Fluffy and soft pumpkin muffins, gently spiced, bringing the warmth of fall to your kitchen.

  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prep the muffin tin by lining it with paper liners or spraying it with non-stick spray.
  3. Mix the dry ingredients: whisk together flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt in a large bowl.
  4. Combine the wet ingredients: in another bowl, mix together pumpkin puree, vegetable oil, sugar, and eggs until smooth.
  5. Bring it all together: gradually add wet ingredients into dry ingredients and stir until just combined.
  6. Fill the muffin tin about 2/3 full with the batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Cool in the tin for 5 minutes before transferring to a wire rack.
  9. Enjoy your delicious pumpkin muffins warm or store them for later!

Notes
