  • 1 large yellow onion, peeled and sliced
  • 3 to 4 garlic cloves, minced
  • 1/4 to 1/2 tsp. crushed red pepper flakes (optional)
  • 1/2 tsp. kosher salt
  • 16 oz. fresh pizza dough, room temperature
  • 3/4 cup canned pumpkin puree
  • 5 oz. freshly grated gouda cheese
  • Optional: finely chopped fresh parsley for garnish

Instructions

  1. Preheat your oven to 475°F (245°C).
  2. Sauté the olive oil over medium heat, add onions, and cook until softened, about 5-7 minutes.
  3. Add minced garlic and crushed red pepper flake (if using), and sauté for an additional 1-2 minutes.
  4. Prepare the pizza dough on a floured surface into your desired shape.
  5. Transfer the shaped dough to a parchment-lined baking sheet.
  6. Spread the pumpkin puree evenly over the dough, leaving a border.
  7. Distribute the sautéed onion and garlic mixture over the pumpkin base.
  8. Top the pizza with grated gouda cheese.
  9. Bake for 12-15 minutes or until the crust is golden brown and cheese is bubbly.
  10. Remove from the oven, let it rest for a few minutes, and garnish with parsley if desired.
