  • 1 cup pumpkin puree
  • 1 lb lean ground beef
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 bell pepper, chopped
  • 2 cups vegetable broth
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp cinnamon
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Prep the ingredients by dicing the fresh pumpkin, chopping the onion, bell pepper, and mincing the garlic.
  2. Sauté the aromatics in olive oil over medium heat until soft and fragrant, about 5 minutes.
  3. Add the minced garlic and stir for about 30 seconds until fragrant.
  4. Brown the ground beef, breaking it apart and cooking until fully browned, about 5-7 minutes.
  5. Incorporate the diced fresh pumpkin and pumpkin puree into the pot.
  6. Introduce the drained beans, chili powder, cumin, and cinnamon into the mix.
  7. Add the vegetable broth and stir well, bringing it to a gentle boil.
  8. Simmer uncovered for 30-40 minutes, stirring occasionally.
  9. Taste and adjust seasonings as necessary.
