  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 can (15 oz) pumpkin puree

  • 1/2 cup granulated sugar (for topping)
  • 1 tablespoon pumpkin pie spice (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×13 inch baking pan by greasing or lining it with parchment paper.
  3. Mix the dry ingredients (flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger) in a medium bowl.
  4. Combine the granulated sugar, brown sugar, and vegetable oil in a large mixing bowl, beating until smooth. Add the eggs, pumpkin puree, and vanilla extract, mixing until blended.
  5. Incorporate the dry mixture into the wet mixture gradually, stirring gently until just combined.
  6. Pour the batter into the prepared baking pan and level the top with a spatula.
  7. Make the topping by mixing the granulated sugar and pumpkin pie spice, then sprinkling it over the batter.
  8. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool the cake in the pan for 10 minutes before transferring it to a wire rack to cool completely.
