Protein Pumpkin Streusel Cookies

Delicious and nutritious cookies with the flavors of fall, packed with protein and topped with a crunchy streusel.

Ingredients

  • 1 cup Greek yogurt
  • 1 large egg
  • ½ cup natural sweetener (maple syrup, honey, or coconut sugar)
  • 1 cup oat flour or almond flour
  • 1 scoop protein powder
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • A pinch of salt
  • 1 cup pure pumpkin puree
  • ¼ cup oat flour (for the streusel)
  • 1 tablespoon sweetener (for the streusel)
  • 2 tablespoons melted coconut oil or butter
  • Cinnamon (optional, for the streusel)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the Greek yogurt, egg, and sweetener until smooth.
  3. Combine the oat flour, protein powder, spices, and salt in another bowl.
  4. Mix the dry ingredients into the wet ingredients until just combined.
  5. Fold in the pumpkin puree and any desired mix-ins.
  6. Prepare the streusel by mixing oat flour, sweetener, and melted oil/butter until crumbly.
  7. Scoop the dough onto a lined baking sheet, leaving space between each cookie.
  8. Top each cookie with the streusel mixture.
  9. Bake for 12-15 minutes until golden brown.
  10. Cool on the baking sheet for 5 minutes before transferring to a rack.

Notes

You can freeze cookies for 2-3 months after cooling completely.
