Protein Costco Cheese Danish

A wholesome twist on the classic cheese danish, packed with protein while maintaining delicious flavor.

Ingredients

  • 1 cup Greek yogurt or cottage cheese
  • 1 scoop vanilla protein powder
  • 4 oz reduced-fat cream cheese
  • 1 tsp vanilla extract
  • Zest of 1 lemon
  • 2 tbsp fruit preserves (optional)
  • 1 cup light flour alternative (whole wheat or almond flour)
  • 2 tbsp yogurt
  • A pinch of salt
  • Cinnamon (for topping)
  • Honey (for drizzling, optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix 1 cup of Greek yogurt, 1 scoop of protein powder, and 4 oz of cream cheese in a bowl until creamy.
  3. Add 1 tsp of vanilla extract and the zest of one lemon; fold in 2 tbsp of fruit preserves if desired.
  4. Prepare the dough by combining 1 cup of flour alternative, 2 tbsp yogurt, and a pinch of salt.
  5. Roll out the dough into a rectangle about ¼ inch thick and cut into 4 squares.
  6. Spoon the filling into the center of each square and fold the corners towards the center.
  7. Place them on a lined baking sheet and sprinkle with cinnamon or drizzle with honey.
  8. Bake for 20-25 minutes until golden brown.
  9. Cool for a few minutes before serving.

Notes

These danishes can be frozen for up to 2 months. Reheat them in the oven for a quick treat.
