Protein Autumn Cookie Sandwiches

Delightful cookies that combine cozy autumn flavors with a healthy twist, packed with protein and perfect for fall.

  • 1 cup Protein Powder (vanilla or pumpkin spice recommended)
  • 1 cup Oat Flour or Almond Flour
  • 1/2 cup Greek Yogurt (full-fat or non-fat)
  • 1 Egg (or 1 tablespoon ground flaxseed mixed with 2.5 tablespoons water for a flax egg)
  • 1 teaspoon Seasonal Spices (cinnamon, nutmeg, ginger)
  • 1/2 cup Flavor-Specific Mix-Ins (dried cranberries, pecans, mini dark chocolate chips)
  • 1/4 cup Natural Sweetener (maple syrup, honey, or agave nectar)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the dry ingredients: protein powder, oat or almond flour, and seasonal spices in a large bowl.
  3. Combine the wet ingredients: Greek yogurt, egg, and natural sweetener in another bowl.
  4. Merge the wet and dry ingredients, stirring gently until combined.
  5. Add your flavor-specific mix-ins and fold gently.
  6. Scoop the cookie dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes until edges are lightly golden.
  8. Cool cookies on a wire rack.
  9. Assemble the sandwiches using Greek yogurt or your choice of filling between two cookies.
