Protein Maple Walnut Cookies

Deliciously nutritious cookies packed with protein, made with wholesome ingredients, and infused with the comforting taste of maple and walnuts.

Ingredients

  • 1 cup oat flour or almond flour
  • 1 scoop vanilla or unflavored protein powder
  • 1/2 cup Greek yogurt or dairy-free yogurt
  • 1 egg or flaxseed meal mixed with water
  • 1/4 cup maple syrup
  • 1 teaspoon seasonal spices (cinnamon, nutmeg, ginger)
  • 1/2 cup chopped walnuts or other mix-ins

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the dry ingredients in a large bowl.
  3. Blend the wet ingredients in a separate bowl until creamy.
  4. Combine the wet ingredients into the dry ingredients without over-mixing.
  5. Add your mix-ins and fold gently.
  6. Scoop the dough onto a lined baking sheet, spacing cookies 2 inches apart.
  7. Bake for 10-12 minutes until edges are golden and centers look set.
  8. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to a week. Can also be frozen for longer storage.
