A delightful snack that brings nostalgia with a nourishing twist, combining protein powder, tart cranberries, and zesty orange.

  • 1 scoop (about 30g) protein powder
  • 1 teaspoon cinnamon
  • Pinch of salt
  • 1/2 cup Greek yogurt
  • 1 egg or flax egg (1 tbsp flaxseed meal + 2.5 tbsp water)
  • 1/4 cup natural sweetener (honey, maple syrup, or coconut sugar)
  • 1/2 cup dried cranberries
  • Seasonal spices (e.g., nutmeg, ginger)
  • Optional mix-ins (nuts, chocolate chips)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix dry ingredients: In a large bowl, combine oat flour, protein powder, cinnamon, and salt.
  3. Combine wet ingredients: Whisk together Greek yogurt, egg, and natural sweetener in another bowl.
  4. Blend the mixtures: Add wet to dry and mix gently.
  5. Fold in dried cranberries and any other add-ins.
  6. Scoop dough onto a parchment-lined baking sheet.
  7. Bake for 10-12 minutes or until golden.
  8. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For a vegan option, substitute the egg with a flax egg. These cookies can be stored in an airtight container for up to a week.
