Protein Costco Strawberry Cheesecake

A healthier twist on traditional cheesecake packed with protein and delicious strawberry flavor.

Ingredients

  • 1 cup light flour alternative (like almond flour)
  • 2 tablespoons melted coconut oil
  • 2 tablespoons honey or maple syrup
  • 1 cup Greek yogurt or cottage cheese
  • 8 oz reduced-fat cream cheese, softened
  • 2 scoops protein powder
  • ¼ cup honey or maple syrup
  • 1 cup fresh or frozen strawberries, pureed

Instructions

  1. Preheat your oven to 325°F (162°C).
  2. Combine the light flour alternative, melted coconut oil, and honey or maple syrup in a mixing bowl for the crust.
  3. Press the crust mixture into a 9-inch springform pan.
  4. Mix the Greek yogurt or cottage cheese, reduced-fat cream cheese, and protein powder in another bowl until smooth.
  5. Add honey or maple syrup and the pureed strawberries, mixing until well combined.
  6. Pour the filling over the crust and smooth the top with a spatula.
  7. Bake for 40-45 minutes or until slightly jiggly in the center.
  8. Cool the cheesecake in the oven with the door cracked open for 1 hour.
  9. Chill in the fridge for at least 3 hours, preferably overnight.
  10. Serve with fresh strawberries or a drizzle of chocolate syrup.

Notes

For an extra touch, garnish with fresh strawberries and a sprig of mint before serving.
