Protein-Packed Costco Chocolate Marble Loaf

A healthy twist on the classic chocolate marble loaf packed with protein, perfect for a guilt-free treat.

  • 1 cup Greek yogurt or cottage cheese
  • 3 large eggs
  • ½ cup reduced-fat milk
  • 1 teaspoon vanilla extract
  • 1 ½ cups light flour alternative (almond flour, oat flour, or all-purpose flour)
  • ½ cup protein powder (chocolate or vanilla)
  • ¼ cup cocoa powder
  • 1 teaspoon baking powder
  • Pinch of salt
  • 2 tablespoons cocoa powder (for marbling)
  • Coconut oil or cooking spray (for greasing)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your loaf pan by greasing it with coconut oil or cooking spray.
  3. Mix your wet ingredients in a large bowl: Greek yogurt, eggs, and reduced-fat milk until smooth.
  4. Add the vanilla extract to the wet mixture.
  5. Combine dry ingredients in another bowl: flour, protein powder, cocoa powder, baking powder, and salt.
  6. Fold the dry ingredients into the wet mixture gently until just combined.
  7. Create the marble effect by separating half the batter and mixing in additional cocoa powder.
  8. Alternate spoonfuls of both batters in the loaf pan, swirling gently.
  9. Bake for 45-55 minutes or until a toothpick comes out clean.
  10. Cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Slice and serve warm with Greek yogurt or almond butter. You can also add variations such as bananas or nuts.
