Protein Apple Butter Thumbprint Cookies

Ingredients

  • 1 cup oat flour (or almond flour)
  • 1 scoop protein powder (vanilla or chocolate)
  • 1/2 cup Greek yogurt (or dairy-free yogurt)
  • 1 egg (or flax egg for vegan option)
  • Seasonal spices (cinnamon, nutmeg, or ginger)
  • Flavor-specific mix-ins (chopped nuts, dried fruit, or chocolate chips)
  • 1/4 cup natural sweetener (maple syrup, honey, or coconut sugar)
  • 1/2 cup creamy apple butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix dry ingredients in a large bowl: oat flour, protein powder, and spices.
  3. Combine wet ingredients in another bowl: Greek yogurt, egg, and natural sweetener.
  4. Pour the wet mixture into the dry mixture and gently fold together.
  5. Add apple butter and mix-ins to the dough, folding until combined.
  6. Using a tablespoon, scoop and roll the dough into balls on a lined baking sheet.
  7. Make an indent in the center of each ball with your thumb.
  8. Spoon apple butter into each thumbprint well.
  9. Bake for 12-15 minutes or until edges are golden.
  10. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container for up to a week or freeze for up to three months.
