Delightful Peach Tartlets

Fresh and delicious Peach Tartlets that capture the essence of summer with buttery crust and sweet cinnamon-baked peaches.

  • 1 cup all-purpose flour
  • 1/4 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon cold water
  • 2 ripe peaches, pitted and sliced
  • 1 tablespoon brown sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Prepare the Dough: In a mixing bowl, mix together the flour, granulated sugar, and salt. With your fingers or a pastry cutter, cut in the softened butter until the mixture resembles coarse crumbs. Add the vanilla extract and cold water. Mix until the dough begins to hold together. Don’t overmix!
  2. Chill the Dough: Wrap the dough in plastic wrap and refrigerate for about 30 minutes.
  3. Preheat the Oven: Preheat your oven to 350°F (175°C).
  4. Prepare the Peach Filling: In a bowl, toss together the sliced peaches, brown sugar, cinnamon, cornstarch, and lemon juice.
  5. Roll Out the Dough: Roll the chilled dough on a lightly floured surface until about 1/8 inch thick.
  6. Shape the Tartlets: Press each dough circle into the wells of a greased muffin tin, coming up the sides.
  7. Fill the Tartlet Shells: Spoon the peach filling into each shell.
  8. Bake: Bake in the preheated oven for 20-25 minutes until the crust is golden brown.
  9. Cool: Let the tartlets cool in the tin for about 10 minutes before transferring to a wire rack.

Notes

Serve warm with vanilla ice cream or whipped cream. Garnish with fresh mint leaves for added flair.
