A delightful rustic dessert featuring juicy peaches and optional raspberries in a flaky crust, perfect for summer gatherings.

Ingredients

Scale
  • 4 ripe peaches, sliced
  • 1 cup raspberries (optional)
  • 1 tablespoon sugar
  • 1 teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 1 pre-made pie crust
  • 1 egg (for egg wash)
  • 1 tablespoon butter, cut into small pieces

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine sliced peaches, raspberries, sugar, nutmeg, and lemon juice in a large bowl. Toss gently and let sit for 10-15 minutes.
  3. Roll out the pie crust on a floured surface to about 12 inches in diameter.
  4. Transfer the rolled-out crust onto a baking sheet lined with parchment paper. Spoon the fruit mixture into the center, leaving about 2 inches around edges.
  5. Fold the edges of the crust over the fruit, creating pleats.
  6. Beat the egg in a small bowl and brush it over the crust.
  7. Add small pieces of butter on top of the fruit filling.
  8. Bake for 30-35 minutes, until the crust is golden brown and fruit is bubbly.
  9. Cool for 10 minutes before serving.

Notes
