The Easiest Oreo Cheesecake Bars Recipe You’ll Ever Make!

Delicious and easy-to-make Oreo Cheesecake Bars with a rich Oreo crust and creamy filling.

Ingredients

Scale
  • 22 Oreos (about 2 cups finely crushed)
  • 4 tablespoons salted butter (melted)
  • 2 (8-ounce) packages full-fat cream cheese (room temperature)
  • ⅔ cup granulated sugar
  • ½ cup sour cream (room temperature)
  • 2 teaspoons pure vanilla extract
  • 2 large eggs (room temperature)
  • 14 Oreos (roughly chopped or broken up, divided)

Instructions

  1. Preheat your oven to 325°F (165°C). Line an 8×8-inch baking dish with parchment paper.
  2. Combine the finely crushed Oreos and melted butter in a medium bowl until the mixture resembles wet sand. Press into the bottom of the prepared pan.
  3. Bake the crust for 10 minutes in the preheated oven.
  4. Beat the cream cheese in a large mixing bowl until smooth and creamy, about 2-3 minutes.
  5. Add the granulated sugar, mixing until fully combined. Then mix in the sour cream, vanilla extract, and eggs one at a time.
  6. Fold in the roughly chopped Oreos.
  7. Pour the cheesecake filling over the cooled crust and smooth the top. Bake for 30-35 minutes until the edges are set but the center jiggles slightly.
  8. Cool in the pan for about 30 minutes before transferring to the fridge to chill for at least 2 hours.
  9. Cut into squares and serve chilled.

Notes

For added flavor, drizzle with chocolate sauce or top with whipped cream and crushed Oreos. Store leftovers in an airtight container in the fridge for up to 5 days.
