Crockpot Garlic Parmesan Chicken and Potatoes

  • 4 pieces boneless, skinless chicken breasts
  • 1 pound baby potatoes, halved
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Prep your ingredients: Gather all your ingredients and chop your garlic, halve the potatoes, and pat the chicken dry.
  2. Season the chicken: In a mixing bowl, season the chicken with salt, pepper, and Italian seasoning.
  3. Layer in the crockpot: Place the seasoned chicken at the bottom of the crockpot and layer the potatoes on top.
  4. Sprinkle minced garlic and pour the chicken broth over the top.
  5. Add the grated Parmesan cheese over the sauce for a creamy texture.
  6. Set to cook on low for 6-8 hours or on high for 4-5 hours.
  7. Check that the chicken is cooked through, then gently stir everything together to serve.

Notes

For best flavor, marinate chicken in broth beforehand. You can substitute chicken thighs for richer flavor.
