Slow Cooker Cowboy Casserole

A warm and comforting dish with layers of ground beef, beans, and creamy Yukon Gold potatoes, perfect for family gatherings.

  • 1 pound lean ground beef
  • 1 cup finely diced sweet yellow onions
  • 1 tablespoon minced garlic
  • 1 (16-ounce) can dark red kidney beans, undrained
  • 1 (14.5-ounce) can petite diced tomatoes with juice
  • 1 (10-ounce) can diced tomatoes with fire-roasted hatch chilies, with juice
  • 1 cup frozen corn
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly cracked black pepper
  • ¼ teaspoon chipotle powder
  • pounds Yukon Gold potatoes, sliced about inch thick
  • 1¼ cups Colby and Monterey Jack cheese, freshly shredded

Instructions

  1. Brown the beef in a skillet over medium heat, cooking until browned, about 5-7 minutes. Drain excess grease and set aside.
  2. Sauté the onions in the same skillet until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute.
  3. Combine the browned beef, sautéed onions and garlic, kidney beans, diced tomatoes, frozen corn, salt, pepper, and chipotle powder in the slow cooker. Stir well.
  4. Layer the sliced potatoes on top of the beef mixture, spreading them evenly.
  5. Top with freshly shredded cheese.
  6. Cook on low for 6-8 hours or high for 4-5 hours, until the potatoes are tender.

Notes

Feel free to swap the ground beef for turkey or plant-based options for a lighter meal. Adjust the spice level to your preference.
