One Pot Chicken and Rice

A cozy family favorite, this One Pot Chicken and Rice is hearty, delicious, and effortless to prepare, perfect for gatherings.

  • 1½ cups uncooked basmati rice
  • 6 chicken thighs
  • 1½ tsp mixed herbs
  • 2 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 Tbsp olive oil
  • 1 cup chopped onion
  • 1 Tbsp butter
  • 3 cups low sodium chicken stock
  • Salt and pepper to taste
  • ½ cup green onions for garnish

Instructions

  1. Prep your ingredients: Gather and prepare all ingredients, chopping onions and measuring rice and spices.
  2. Brown the chicken: In a large pot over medium-high heat, add olive oil. Season chicken thighs with salt and pepper, then sear skin-side down for 5-7 minutes until golden.
  3. Remove the chicken: Take browned chicken out and set aside. Add butter and chopped onion to the pot, sautéing for 3-4 minutes until soft.
  4. Add spices: Stir in garlic powder, onion powder, mixed herbs, and smoked paprika, cooking for 30 seconds.
  5. Combine rice and chicken: Stir in uncooked basmati rice and return the browned chicken to the pot, skin-side up.
  6. Pour in stock: Add chicken stock, stir, bring to a gentle boil, then reduce to low and cover. Simmer for 25-30 minutes until rice is cooked.
  7. Check and fluff: After cooking, let it rest covered for 5 minutes, then gently fluff rice with a fork.
  8. Garnish and serve: Sprinkle chopped green onions on top before serving.

Notes

For variations, consider adding lemon zest, vegetables, or using coconut milk instead of chicken stock.
