Honey BBQ Chicken and Rice

A comforting one-pan dish featuring tender chicken thighs glazed in sweet and smoky barbecue sauce served over a fluffy bed of rice.

  • 1.5 lbs Chicken Thighs
  • 2 tbsp Olive Oil
  • 1.5 cups Long-Grain White Rice
  • 3 cups Chicken Broth or Water
  • 1 cup Barbecue Sauce
  • 0.5 cup Honey
  • 1 medium Onion
  • 3 cloves Garlic

Instructions

  1. Sauté the chicken by heating olive oil in a large pan over medium-high heat. Add chicken thighs skin-side down and sear for 5-7 minutes until golden brown.
  2. Add chopped onion and minced garlic, and sauté for 3-4 minutes until onions are translucent.
  3. Introduce the long-grain white rice and let it toast for about 1 minute.
  4. Add chicken broth, bringing everything to a gentle simmer.
  5. Bring on the barbecue sauce and honey, coating the chicken and rice. Cover and simmer for 25-30 minutes.
  6. Check for doneness; ensure the chicken reaches 150°F. Fluff the rice with a fork.
  7. Finish by letting it rest for a few minutes before serving.

Notes

For a different flavor profile, add chopped bell peppers or zucchini. Substitute half of the honey with sriracha for a sweet and spicy fusion.
