Herb Roasted Chicken in Creamy White Wine Sauce

A comforting classic, this herb-roasted chicken with a creamy white wine sauce creates mouthwatering aromas that fill your home and bring your loved ones together.

  • 1 whole chicken, divided into 8 pieces, or about 4 skin-on chicken breasts or 6 bone-in, skin-on thighs
  • 1 tbsp (12 g) kosher salt, divided
  • 1 tsp black pepper, divided
  • 3 tbsp (44 g) salted butter
  • 1 cup (236 g) brown mushrooms, halved
  • 3 shallots, diced
  • 2 medium stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 tbsp (4 g) dried or fresh sage, minced
  • 2 tsp dried or fresh parsley, minced
  • 1/4 cup (32 g) all-purpose flour
  • 1/2 cup (120 ml) dry white wine
  • 2 cups (480 ml) chicken stock
  • 1 lb (454 g) baby yellow potatoes, halved
  • 1/4 cup cream

Instructions

  1. Preheat your oven to 425°F (220°C) and season chicken with half of the salt and pepper.
  2. Sear the chicken in a pan with melted butter for 5-7 minutes until golden brown on one side, then flip and sear the other side for 5 minutes.
  3. Sauté shallots, celery, and mushrooms for about 5 minutes, then add garlic, sage, and parsley for another minute.
  4. Sprinkle flour over sautéed vegetables, cook for 1 minute, then pour in white wine and simmer for 2-3 minutes.
  5. Add halved potatoes and nestle chicken back in the pan, seasoning with remaining salt and pepper.
  6. Roast in the oven for about 45 minutes until chicken is cooked through and potatoes are tender.
  7. Finish by stirring in cream to the sauce and adjusting seasonings as needed.

Notes

Serve with a sprinkle of fresh herbs and a loaf of crusty bread to soak up the sauce.
