A simple and flavorful roasted yellow squash dish that brings together comfort and taste.

  • 2 medium yellow squash (sliced into half-moons)
  • 2 tablespoons olive oil (for caramelization)
  • 1 teaspoon garlic powder (enhances flavor)
  • 1 teaspoon onion powder (adds depth of flavor)

  • Fresh herbs (thyme or rosemary) (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse the squash under cool water, slice off the ends, and cut into half-moons, about 1/2 inch thick.
  3. Toss the sliced squash in a bowl with olive oil, garlic powder, onion powder, salt, and pepper.
  4. Spread the seasoned squash evenly on a baking sheet lined with parchment paper.
  5. Roast in the oven for about 20-25 minutes, stirring halfway through for even browning.
  6. Garnish with fresh herbs before serving hot.
