Cheesy Zucchini Tots

Crispy, cheesy bites filled with tender zucchini, perfect for snacking or as an appetizer.

  • 2 cups grated zucchini
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Prep the zucchini: Grate using a box grater and squeeze out excess moisture.
  2. Combine ingredients: In a bowl, mix grated zucchini, cheese, breadcrumbs, Parmesan, eggs, garlic powder, onion powder, salt, and pepper.
  3. Form the tots: Scoop about a tablespoon of mixture and shape into small tots.
  4. Heat the oil: In a skillet, heat olive oil over medium heat or prepare to bake at 400°F (200°C).
  5. Fry the tots: Cook in the skillet for 3-4 minutes on each side until golden brown.
  6. Drain and cool: Transfer to a paper towel-lined plate to absorb excess oil and cool slightly.

Notes

For a healthier option, bake instead of frying. Serve with marinara or herbed yogurt dip.
