One Pan Viral Baked Feta Pasta with Juicy Cherry Tomatoes

A stunning and easy-to-make baked feta pasta with caramelized cherry tomatoes, packed with flavor and nostalgia.

Ingredients

  • 2 cups (300g) cherry tomatoes
  • 7 oz (200g) block feta cheese
  • 3 tbsp (45 ml) extra virgin olive oil
  • 4 cloves garlic, minced (about 1 tbsp)
  • 8 oz (225g) dry pasta (penne or rigatoni recommended)
  • 1/4 tsp red pepper flakes (optional)
  • A handful (10g) fresh basil, chopped
  • Salt, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Grab a large oven-safe baking dish or a cast-iron skillet and place the cherry tomatoes in the center.
  3. Drizzle the tomatoes with olive oil and sprinkle with salt, then toss to coat.
  4. Nestle the block of feta cheese into the center of the tomatoes and drizzle more olive oil on top.
  5. Add the minced garlic and red pepper flakes around the tomatoes and feta.
  6. Pop the dish into the oven for about 25-30 minutes.
  7. Bring a large pot of salted water to a boil and cook the pasta according to package directions until al dente.
  8. Remove the dish from the oven and mash the feta and tomatoes together.
  9. Add the cooked pasta directly into the pan, tossing together, and adjust with pasta water if needed.
  10. Finish by stirring in the chopped fresh basil and adjusting seasoning with more salt if necessary.

Notes

Feel free to experiment with seasonal veggies or add protein like chicken or chickpeas for a heartier meal.
