  • 2 cups almond flour
  • 1 cup pumpkin puree
  • 1/2 cup erythritol or other sugar substitute
  • 1/4 cup coconut oil, melted
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare an 8-inch square baking dish by greasing it with coconut oil or lining it with parchment paper.
  3. Mix the wet ingredients in a large bowl: whisk together the pumpkin puree, melted coconut oil, erythritol, eggs, and vanilla extract until smooth.
  4. Combine the dry ingredients in another bowl: almond flour, baking powder, cinnamon, nutmeg, and salt.
  5. Mix the dry ingredients into the wet mixture gradually, folding gently.
  6. Chop the pecans (if using) and fold them into the batter.
  7. Pour the batter into the prepared baking dish and smooth it out.
  8. Prepare the crumb topping by mixing a handful of almond flour, erythritol, coconut oil, and cinnamon.
  9. Sprinkle the crumb mixture evenly over the batter.
  10. Bake for 30-35 minutes or until a toothpick comes out clean.
  11. Cool in the pan for about 10 minutes before slicing into squares.

Notes

Serve warm or at room temperature, ideally with a dollop of whipped cream or a scoop of vanilla ice cream.
